What better way to celebrate fall than by baking some scrumptious pumpkin white chocolate chip cookies?! These treats are simply fantastic. Pumpkin plus white chocolate equals perfection.

And it’s super easy to make.

First, mix all the ingredients together and drop the batter onto the cookie sheet. Next, take a sugar-dipped glass and flatten out the cookies.

Bake them for exactly 9 minutes, and as soon as you take them out, flatten them out once more with the sugar dipped glass. Then add a few extra chocolate chips on top 😉

I made these cookies with my two-year-old niece and it was a blast. For all the mommas (or aunts or nannies or teachers) out there looking for some fun fall cookies to make with the tots- this recipe is the way to go.

Not only is it kid approved, but it’s also husband approved. This recipe satisfies everyone. Make it for dessert, or bring it to your next holiday party, because it is a huge crowd pleaser.

Fair warning though- once you try them, you won’t be able to stop eating them.

Pumpkin White Chocolate Chip Cookies

Ingredients:

  • 1/4 cup brown sugar
  • 1/4 cup white sugar
  • 1/2 cup butter, softened
  • 1/2 cup pumpkin puree
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon pumpkin spice
  • 1/2 teaspoon baking soda
  • 1 1/2 cups all-purpose flour
  • 1/2 cup white chocolate chips
  • sugar for topping the cookies
  • extra white chocolate chips for topping the cookies

Directions:

  1. Preheat over to 375 degrees.
  2. Mix together the sugars and butter. Add the pumpkin and mix well. Add in all of the spices, followed by the flour, and mix together. Stir in the white chocolate chips.
  3. Drop the batter by tablespoons onto a nonstick cookie sheet or baking mat. Use the bottom of a medium sized glass, dip the glass into sugar, then press it into the cookie dough.
  4. Bake at 375 degrees for 9 minutes.
  5. Immediately after taking the cookies out of the oven, flatten lightly again with the sugar-dipped glass. Press a few extra white chocolate chips into the top to make them look pretty. Enjoy!

Note: There’s no need to wet the glass before dipping it in sugar- after the first press the sugar will stick easily to the glass and transfer onto the dough.

  1. Yum! I’m not back onto the pumpkin train yet this year, and I’ve found that in the last year or two I’ve had a love/hate relationship with pumpkin-flavoured food. But these cookies definitely look delicious, especially with the white chocolate chip cookies! Will have to give these a try when the pumpkin cravings hit mid-fall 🙂 Thanks for sharing!
